This has not been formatted for digital edition (e-book). The table of contents is terribly out of alignment, so it's difficult to find what you are looking for. Charts and tables are also horribly out of alignment, I couldn't even begin to tell what the columns were supposed to be, let alone figuring out which number belonged under which column. Totally useless! Every 2-3 pages, there is something that looks like a white pole sitting in front of the square opening of a white fireplace ... only in surreal shadow form. There are other squares on pages with the same shadowy characteristic, no image, just shadow. I have no idea if those are supposed to be pictures. This same "book" is available at the National Center for Home Food Preservation. You can read it online for free, or download the individual sections in pdf format. Very good Does recommend that you follow the lid manufactures guide lines for pre- processing. This has not changed since 1966. Also according to Ball and Mason canning web site, lids not to be boiled but put in hot water to soften the seal. In short follow Ball Blue Book, current edition only. The best canning book I have is "The Complete Ball Blue Book", order from . Note, my oldest pressure caner was from 1984. The newest is an All American Pressure Caner number 925 from . Same as 1984 edition. Saves on rising food prices, process your own, and know whats in your food. )
In the version sent to me, the tables containing processing temps & times were completely unreadable due to computer glitch "typos". The free version I found on-line had perfect tables, so I downloaded & printed those for free.
I wanted a bound book, but this one was worthless!
Perhaps a different publishing "run" in the future will be printed without the table glitches, but the book sent to me was a complete waste of money.
If you must have a bound book and don't have your own laser printer, having this book is better than using outdated information. Had I known what I was getting, I would have just printed the same information that the US Dept. of Agriculture makes available free on the web. The text is accurate but the illustrations are photocopies of photocopies and are very difficult if not sometimes, impossible to read. if you can afford to just print the information from the web and have a laser printer and 3-hole punch, I highly recommend doing so.
Nice resource but NOT in color as the "Look Inside" version. Appears that they are printing this item very quickly to make money. I appreciate the resource ( which I can download online at their website for free or read online via a PDF for free), but I don't appreciate receiving a book that is not as advertised. First off it is NOT in color - only the cover is. There demo in the "Look Inside" has several items in color yet this book is like reading a newspaper. Pictures are not sharp and the print on many items is blurry, I am not sending it back since the resource is helpful and I like to flip through pages while canning. I plan to buy the Ball Book of Complete canning since I had it on loan from the library and was as advertised. If you have a printer you can easily print this at home in black and white , punch some holes in it and place it in a binder ( which is what I should have done since the print quality would have been better).
Update I will be sending this back for a refund. I printed it off ( approx 90 double sides pages) on my laser jet printer in black and white ( using toner saver to save ink), and it looks almost identical to the version I purchased! .I am convinced this book is just a XEROX COPY! Now plan to use my 3 hole punch and place this in a dollar store binder!
Unusable due to digital formatting. The whole point of this guide is proper pressure and timing for canning. Because all that information for each food / recipe is provided in tables, it does not translate from print to digital format making the "tables" non-existent and or impossible to read. Save your self the hassle, frustration, and possible food-born illnesses and buy the printed version.
I picked up the 1999 revision of this book by Dover publications a couple years ago. Very handy book, with current information from the USDA. Complete Guide to Home Canning and Preserving (Second Revised Edition) Nice small book as reprinted from the USDA. I wanted another copy so that I'd have one to loan to my potential canning class students and not lose my own. While this one has the exact same information as best I can tell and with the original USDA pagination, the quality of the black and white illustrations and printing are awful. Its difficult to read what the illustrations are trying to impart. Its as if they just used inkjet printed PDF files straight off the internet(which are in color by the way and FREE off publication sites like this FREE USDA pdf files nchfp(DOT)uga(DOT)edu/publications/publications_usda(dot)html) Even though this is the 2009 revision, I can't see any difference in the information. If you can download the free pdfs, I would NOT buy this version from this publisher. If you really want a book, buy the Dover publication, at least it will be clear enough to read.
If you prefer print, this will not disappoint. It is a simply made glued together soft paperback put out buy some group that is using the free pdf that the government puts out on home canning. The pdf can be carried with you when you are grocery shopping and the print can be used in your kitchen. It is full of useful recipes on home preserving that is up to date with the latest protocols for home canning.
